Quick Meal Idea: Peel and half 4 carrots and 4 parsnips. Toss veggies lightly in oil and roast until soft (about 30 minutes at 350F). Just before serving toss the vegetables with a tablespoon or two of Onion Balsamic Marmalata. Delicious!
